PECAN LOG 
2 c. sugar
1/4 tsp. salt
2 1/2 c. white Karo syrup

Mix and cook to 235 degrees. Beat 3 egg whites in warm bowl. Add 1/3 hot syrup and continue beating. Put syrup back on stove and cook to 263 degrees. Add slowly to egg white mixture. Beat until stiff. Add nuts and 1 teaspoon vanilla. Melt 6 tablespoons butter.

Pour half of the butter over the candy and add 1 teaspoon flour. Fold in carefully. Add rest of butter and 1 more teaspoon flour. Fold swiftly. Do not stir too much. Pour out in pan and cool. Cut in squares. May be used as center for Pecan Logs. If used for Pecan Logs, nuts may be omitted.
