PUMPKIN BREAD 
2 1/2 c. sugar
1 tsp. cinnamon
1 tsp. nutmeg
4 eggs
1 tsp. salt
1 c. vegetable oil
1 c. pumpkin, applesauce, or zucchini
2/3 c. water
2 tsp. baking soda
3 c. flour
Raisins; optional
Nuts; optional

Beat sugar, cinnamon, nutmeg, eggs, salt, and oil together. Add pumpkin (applesauce or zucchini), water, baking soda, flour, raisins, and nuts if desired. Beat mixture well.

Grease and flour 3 (1 pound) coffee cans or 2 loaf pans. Fill equally. Bake at 350 degrees for 1 hour. Turn oven off and wait 10 minutes before removing form oven. Wait another 10 minutes before removing from pans. Wrap in foil. Freeze or keep in refrigerator.

This is great at Thanksgiving.
