POTATO SOUP DELUXE 
8 potatoes, unpeeled, cut into lg. cubes
2 cloves elephant garlic or 4 cloves regular
1 med. onion, chopped
1 tbsp. rosemary, ground

Cover with water. Cook until very tender. Drain. Add cube of butter, sea salt to taste, and cayenne pepper to taste. Beat until smooth, like mashed potatoes. Add enough half & half or milk to make soup consistency. Top with fresh chopped chives and grated Cheddar cheese. One can cream corn may be added to make corn chowder.
