PELAU - WEST INDIES 
1 1/2 lbs. beef
1 lb. rice
3/4 lb. black-eye peas
2 lg. onions
1/2 bunch spring onions
1 lg. capsicum
2 tbsp. vinegar
1 1/2 tsp. white pepper
Salt to taste
2 beef cubes
3 tbsp. cooking oil
1 tbsp. brown sugar
1/2 lb. pumpkin

Put peas and pumpkin in saucepan with water to cover them, cover and let boil until tender. Cut beef in squares, add seasoning and vinegar, leave for one hour.

Put cooking oil in a pot to heat, add brown sugar; stir occasionally until dark brown. Put in pieces of beef to brown, not seasoning, then add a little cold water at a time to prevent burning.

Cover and let cook, medium heat, until tender. Add seasoning and beef cubes. Simmer for a few minutes, then add peas and rice and enough water to cover rice. Cover and steam on low heat for about 20 minutes.
