BROCCOLI CASHEW SALAD 
1 lg. head broccoli
1/2 lb. bacon
1 sm. red onion, chopped
1/2 c. raisins
1 c. cashews
1 c. Miracle Whip
1/2 c. sugar
2 tsp. vinegar

Wash broccoli thoroughly, drain. Cut into bite-size flowerets. Fry bacon, do not allow to get crisp. Drain and tear into small pieces.

Combine Miracle Whip, sugar and vinegar, stirring until well blended. Combine broccoli, bacon, onion and raisins in large bowl. Toss with salad dressing. Chill for several hours or overnight. Stir in cashews before serving. 6 to 8 servings.

I prepared this according to the directions and didn't care for the way the bacon got soggy. Still, it tasted good. The second time I made it I left the bacon out until it was time to add the cashews--much better. I only used half an onion and used mayo instead of Miracle Whip the second time I made it. Also cut the sugar to 1/4 cup. It wasn't as sweet as the first batch, but to me it tasted better. My family agreed.
