MORAVIAN SUGAR CAKE 
1 c. sugar
1/2 c. shortening
4 tbsp. butter
1 tsp. salt
1 cake yeast
1 c. potatoes, warm, mashed & unsalted
2 eggs

TOPPING:

1 stick butter
1 pkg. brown sugar
Cinnamon

Put yeast in 1/2 cup warm water. Add sugar, salt, shortening, butter and potatoes to make a sponge. Let it rise until it bubbles, 1 1/2 to 2 hours. Add eggs, beating until frothy and flour enough to make a soft dough. Let rise until double, then spread in shallow pans. Let rise again and put on brown sugar, butter and cinnamon. Bake 20 to 25 minutes at 375 degrees.
