LOW CAL CORNMEAL CAKE 
1 beaten egg
1/2 tsp. baking powder
1/2 tsp. cinnamon
Sweet & low to equal 6 tsp. sugar
1 1/2 tsp. vegetable oil
1 tsp. vanilla
1/4 c. buttermilk
1 oz. yellow corn meal
1/4 c. crushed pineapple

Combine first 7 ingredients; mix well. Stir in corn meal and pineapple. Pour into a 5 inch baking dish. Bake at 350 degrees for 25 to 30 minutes or until firm to touch. Equals 1 protein, 1 1/2 fat, 1/3 milk, 1 bread, 1/2 fruit.
