“MOIST BANANA BREAD” IS IN:

MOIST BANANA BREAD 
1 1/2 cups sugar
1/2 cup (1 stick) butter
2 eggs
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups flour
3 large very ripe bananas, mashed
1/2 cup nuts, chopped (optional)
1 teaspoon vanilla extract

Blend together sugar, butter, and eggs. Add dry ingredients, which have been sifted together. Add mashed bananas, chopped nuts (if using), and vanilla extract. Pour into a greased loaf pan.

Bake at 375°F degrees for 1 hour.

Brush top with melted butter or glaze with confectioners icing, if desired, while loaf is still warm.

I used this recipe and substituted 1/2 the sugar with that amount of granulated Stevia. It was still sweet enough for me and it had a wonderful crust. I used chopped pecans as the nuts... Wonderful! I used a convection oven and did not have to lower the cooking time. It is hard for me to judge the moistness.. but I am using the stated cooking time.

This was just the recipe I needed. The bread turned out very moist, and the crust browned perfectly and evenly. I added 1/4 cup chocolate chips and used 1/4 cup nuts. My husband LOVED it, and I will be giving out loaves of this recipe for Christmas! Very impressed by this!

I love, love, love this. Right now I don't even know what's different from the banana bread I usually made and that I could not find my recipe for (what luck!). However, I do have one question - while it is the most delicious ever, it also come out as my weirdest one... The crust is separating from the inside of the bread. Any idea how I might have brought this about?

Love this recipe. I make it vegan by using an egg replacement (EnerG) and vegan butter (Earth Balance). I don't usually have nuts at my house so I don't add them either. Still comes out moist and delicious and my friends say they can't tell it's vegan.

Oh so good! I used self-rising flour instead of plain flour, baking powder and soda. The next time I will use less sugar. Other than that, it's a six star!

I have baked more than a dozen of these. Everyone loves it. I have lessened the amount of sugar and even substituted Splenda for it. It still is amazing. I also bake it for 50 minutes.
