BLUEBERRY TOPPING 
2 c. frozen unsweetened berries (strawberries, blueberries, etc.)
3 tbsp. unsweetened frozen apple juice concentrate
1 tsp. vanilla extract
1 to 2 tbsp. cornstarch
2 to 4 tbsp. water

Place the berries in a saucepan with the apple juice and vanilla. Bring to a boil, cover, and cook over low heat for about 10 minutes, stirring occasionally, until the berries are soft and partially cooked. Combine the cornstarch with the water, using enough water to make a smooth paste. Stir the cornstarch mixture into the simmering berries and continue cooking over low heat, stirring constantly, until the mixture is thickened. Serve hot or chilled. Yield: about 1 1/2 cups. 3/4 cups counts as 1 fruit.
