SQUASH CASSEROLE 
2 lb. yellow squash, sliced
1 med. onion, chopped
1 c. cracker crumbs (Waverly Wafers)
1/2 tsp. salt
Dash of black pepper
1 c. grated cheese
3 tbsp. butter
1/2 c. milk
1 egg

Cook squash and onion until tender. Remove from heat, drain. Add salt, pepper, butter, cheese, cracker crumbs, milk and egg. Stir well. Pour into 1-quart casserole. Sprinkle with grated cheese. Can cut strips of bacon on top if desired. Bake 30 minutes in 350 degree oven. Can do ahead. Can freeze.
