BANANA CAKE COKAIGNE 
2 1/4 c. cake flour
1/2 tsp. double acting baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 1/2 c. sifted sugar
2 eggs
1 c. ripe bananas, lightly mashed
1 tsp. vanilla
1/4 c. yogurt or buttermilk

In large bowl, sift flour, baking powder and baking soda with salt and set aside.

In a large bowl, cream butter, sugar and beat in one egg at a time. Add flour mix to butter mixture in 3 parts, alternating with banana and yogurt. Add vanilla to mixture; stir batter after each addition until smooth. Bake at 350 degrees in 2 greased 9-inch round cake pans for 30 minutes.

When cool, place 2 sliced ripe bananas between the layers and spread with white icing.

Has a great banana flavor! When it's my turn to bake, this cake is frequently requested.
