BANANA NUT POUND CAKE 
1 1/2 c. Wesson oil
2 1/2 c. sugar
3 eggs, beaten
3 c. flour
1 tsp. baking soda
3/4 tbsp. salt
1 tbsp. vanilla
1/2 c. buttermilk
1 1/2 c. banana (2 lg.)
1 c. nuts
1 c. coconut

Cream sugar and oil. Add beaten eggs. Mix dry ingredients and add alternately with buttermilk. Pour in greased and floured tube pan. Bake 1 hour and 20 minutes at 350 degrees.

Wanted to tell you that you don't need buttermilk if you don't want to. You can use half and half or your coffee creamer (maybe even just milk). Can use three small bananas rather than two large. For muffins, I only cooked them for about 25-30 minutes. Check them with a toothpick before you remove them. Enjoy --- XOXO
