CHICKEN SCAMPI | |
1/4 lb. butter 2 cloves garlic, chopped fine 1 1/2 lb. boneless chicken breasts, diced 1 tbsp. parsley 2 tbsp. white wine 1/4 c. Italian bread crumbs Melt butter in frying pan. Add finely chopped garlic and heat over medium flame for a few minutes to allow flavor to seep into butter. Add chicken and parsley flakes; stir-fry until chicken is 3/4 cooked. Add wine and stir chicken again. Cover and simmer 5 minutes over low flame. Stir in bread crumbs and serve over rice. |
