CHICKEN SCAMPI 
1/2 c. butter
1/4 c. olive oil
1/4 c. green onion
1 tbsp. minced garlic
Juice of 1 lemon
2 lb. chicken breasts
1 tsp. salt
1/2 tsp. black pepper
1/4 c. minced fresh parsley
1 tomato, chopped
Buttered noodles or cooked rice

Finely chop the onions. Bone, skin and cut the chicken breasts in 1/2 inch pieces. In skillet, heat together butter and olive oil and saute onions and garlic. Add lemon juice, chicken, salt, pepper (freshly ground), and parsley. Continue cooking, stirring constantly, for 5 to 8 minutes or until chicken is done. Add tomatoes and heat through. Serve over buttered noodles or hot rice. Delicious!
