CHICKEN SCAMPI | |
1/2 c. butter 1/4 c. olive oil 1/4 c. green onions, finely chopped 1 tbsp. garlic, chopped Juice of 1 lemon 2 lbs. chicken breasts, boned, skinned & cut into 1/2" pieces 1 tsp. salt 1/2 tsp. black pepper 1/4 c. minced fresh parsley Buttered noodles or rice In skillet heat together butter and olive oil and saute green onions and garlic. Add lemon juice, chicken, salt, pepper and parsley. Continue cooking, stirring constantly for 5 to 8 minutes or until chicken is done. Serve over buttered noodles or hot rice. |
