CHICKEN SCAMPI 
1/4 c. olive oil
1/4 c. butter
1/4 c. onions, chopped
3 tsp. garlic, minced
3 tsp. lemon juice
1-2 lb. chicken, skinned and boned
1 tsp. parsley
Salt and pepper

Saute onion and garlic in olive oil and butter. Add chicken, lemon juice, parsley, and salt and pepper to taste. Saute until tender. Serve over pasta or rice.
