AMARETTO CHEESECAKE 
2 cups graham cracker crumbs
1 stick butter, melted
1 cup sugar
4 (8 oz. each) pkgs. cream cheese, at room temperature
4 large eggs
1/3 cup Amaretto

In a bowl, mix graham cracker crumbs and butter together. Press into bottom and sides of a greased 9-inch springform pan. Chill in freezer while preparing the filling. Cream sugar and cream cheese together. Add eggs one at a time, mixing well. Stir in Amaretto. Pour into prepared crust.

Bake in a preheated 375°F oven for 42-45 minutes until center is almost set. Cool. Refrigerate overnight before serving.
