HUKNER SOUFFLE 
1/2 onion, finely chopped
2 oz. butter
3 tbsp. flour
2 c. hot milk
Salt
Freshly ground black pepper
2 oz. dry bread crumbs
1 c. grated Gruyere style cheese
8 oz. chicken meat, finely chopped
4 eggs, separated
3 sprigs parsley, finely chopped

1. Preheat the oven to 350 degrees.

2. Lightly fry the onions in the butter, add the flour. Cook for 3 minutes and add the hot milk, stirring constantly.

3. Add the bread crumbs, stir and cook until smooth. Season.

4. Remove from the heat and mix in the grated cheese, chicken meat and egg yolks.

5. Beat the egg whites until they hold stiff peaks.

6. Gently fold them into the chicken mixture. Add the parsley.

7. Pour the mixture into a buttered souffle dish and bake the preheated oven for 35-40 minutes. Serve hot with a green salad. Serves 4-6.
