COCONUT DANISH 
1 pkg. Hungry Jack refrigerator biscuits (sm. 5 biscuit size)
1 c. part-skim ricotta cheese
5 tsp. sugar
5 tsp. coconut, grated
1 tsp. coconut extract
1 egg

Preheat oven to 375 degrees. Put shelf in center. Spray cookie sheet with Pam. Place the 5 biscuits on the cookie sheet and press each one out to about 4 inch circle with your finger tips.

Mix the cheese, egg, sugar, extract and coconut together. Divide the cheese mixture among the biscuits, mounding in the centers of the danish. Do not spread to edges. It spreads as it cooks. Bake in oven for 13 minutes or until edges are brown. Remove from oven and let set for 5 minutes before serving. Makes 5 Danish. 1 bread, 1 protein, 30 optional calories.
