CHINESE NEW YEAR RICE 
3 tbsp. vegetable oil
1 lb. boneless chicken breasts, cut into bite size pieces
3 1/2 c. chilled cooked rice
3 green onions, sliced
1 stalk celery, diagonally sliced
1 sm. carrot, shredded
1 to 2 tbsp. soy sauce
1/2 tsp. black pepper

Heat oil. Add chicken. Cook and stir until lightly browned. Add remaining ingredients. Cook until heated through.
