MEXICAN BRUNCH 
1 lg. Italian sausage
1/2 c. diced onion
1/2 c. diced tomato
4 to 5 eggs, beaten with
A splash of milk
6 to 8 corn tortillas
2 c. shredded cheddar cheese
Pace picante sauce
Black olives, sliced
Sour cream
Guacamole or avocado slices
Refried beans
Tortilla chips

Optional.

Remove casing from sausage. In a large frying pan, crumble sausage and fry until done. Remove and drain on paper towel. Discard grease from pan. Add onion and saute slightly. Add tomato and sausage, then beaten eggs. Cook like scrambled eggs, stirring until done. Salt and pepper to taste.

Wrap tortillas in plastic or paper towel and heat in microwave until warm and pliable (1 to 2 minutes). In a large baking dish, place tortilla and spoon egg mixture into middle (about 2 tablespoons). Fold one edge over eggs and roll tortilla to form a "log." Repeat with remaining tortillas.

Top each "log" with picante sauce and cheese. Bake in oven or microwave until cheese is melted. Serve topped with black olives, sour cream, guacamole or avocado slices. On the side serve refried beans and tortilla chips.

Since microwave ovens vary in power, you may need to adjust your cooking time.
