FRESH RELISH 
8 c. thinly sliced cucumbers, don't peel or grate
1 c. celery
1 c. onion
1 c. green or red mango (sweet)
1 c. carrot

Slice or chop or grate everything above. Mix 1 1/2 cups salt and let stand 1 hour.

SYRUP:

1 c. vinegar
1 tsp. celery seed
1 tsp. mustard seed
2 c. sugar

Combine and dissolve. Pour over vegetables. Will keep in refrigerator months or can be frozen.
