SPICY ORANGE ROUGHY 
4 Orange Roughy fillets, 6 to 8 oz. each
2 garlic cloves, chopped finely
1/2 tsp. chili powder (or to taste)
1/4 to 1/2 tsp. cayenne pepper (or to taste)
1/4 to 1/2 tsp. crushed red pepper (or to taste)
1/2 tsp. salt
1/4 to 1/2 tsp. pepper
1 tbsp. oregano
2 tbsp. finely chopped parsley (reserve 1 tbsp. for garnish)
2 tbsp. olive oil
1/2 c. water
2 tbsp. honey
1 c. crushed tomatoes

Saute all dry ingredients in olive oil for approximately 5 minutes. Add water, honey and crushed tomatoes and simmer for 2 to 3 minutes.

Pour half the sauce into a baking dish. Add fillets, skin side down. Cover with remaining sauce. Cover and bake in a preheated 350 degree oven for 12 to 15 minutes. Sprinkle with fresh parsley. Serve with garlic bread and rice. Serves 4.
