SUCCULENT ORANGE ROUGHY | |
4 orange roughy fillets or other white fish (about 1 1/2 lbs. total) 1/4 c. white wine vinegar 1/4 tsp. dried thyme leaves, crushed 1 tbsp. vegetable oil 1 clove garlic, finely chopped 2 shallots, finely minced or 2 green onions, thinly sliced 1 tbsp. minced fresh parsley 3 dashes cayenne pepper Wash fish and pat dry. Combine remaining ingredients in shallow glass baking dish. Lay fish in dish, turning to coat. Cover and refrigerate for 1/2 to 1 hour. Remove fish from marinade. Drain. Strain marinade, discarding liquid. Place fish in dish and cover with minced ingredients. Cover and bake at 350 degrees for 10 minutes; uncover and bake another 5 to 10 minutes or until fish flakes easily with fork. Makes 4 servings. |
