MINIATURE CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can Comstock cherry, blueberry, etc.

Line cupcake pans with liner. Place a wafer at the bottom of each. In bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill tins 2/3 full. Bake at 350 degrees for 15 to 20 minutes or until set. Top each with a spoonful of Comstock.
