BAKED BLUEFISH NICOISE 
4 tbsp. olive oil
2-3 garlic cloves, minced
1/2 tsp. paprika
1 tsp. basil
1 c. dry white wine
2 tbsp. capers
Lemon wedges
1 lb. bluefish fillets
1 clove
1/4 tsp. thyme
Salt & pepper
4 med. tomatoes, chopped
2 tbsp. parsley

Heat oil. Cook garlic 2 minutes. Add spices, wine and tomatoes and simmer for five minutes. Pour sauce over fish in baking pan. Sprinkle with olive oil and capers. Cover pan with oiled foil.

Bake 10 to 20 minutes on highest setting (broil) until fish flakes.

Garnish with lemon wedges and parsley. Recipe is fast and easy, light and healthy and inexpensive. Even people who don't like bluefish like this! Serves 2.
