1 lg. fillet blue fish, cooked and flaked 4 med. potatoes (can substitute instant potatoes) 2 onions 2 eggs 2/3 c. mayonnaise Salt and pepper to taste Butter or vegetable oil Parsley flakes Peel, cook, and mash potatoes. Chop onions and saute in butter until golden. Mix fish, potatoes, onions, eggs, mayonnaise and spices and parsley flakes together. Form into patties. Cook in frying pan in butter until brown, turning once. When mixed, they can be frozen and taken out and fried on another day. |
