BLUEFISH CAKES 
2 1/2 lbs. bluefish fillets
1/2 c. Old Bay seasoning
1 c. vinegar
6 c. water

Boil 10 minutes. Drain and cool. Flake in bowl white meat only.

Saute: 1/2 c. chopped sm. celery 1/4 c. chopped sm. onion

Mix 1/2 cup mayo, 1 tablespoon mustard, 1 tablespoon Worcestershire sauce, and 1 tablespoon horseradish, 3 eggs, and 1 tablespoon Old Bay seasoning. Toss gently with vegetables and fish. Mold into patties and dip into bread crumbs. Pan fry in oil until golden brown.
