OVEN - FRIED CHICKEN | |
1 tbsp. butter 2/3 c. Bisquick baking mix 1 1/2 tsp. paprika 1 1/4 tsp. salt 1/4 tsp. pepper 2 1/2 to 3 1/2 lb. chicken, cut up Heat oven to 425 degrees. Line rectangular pan, 13x9x2 inches, with aluminum foil for easy clean up if desired. Heat butter in pan in oven until melted. Mix baking mix, paprika, salt and pepper; coat chicken. Place skin sides down in pan. Bake uncovered 35 minutes. Turn; bake until done, about 15 minutes longer. Optional coatings: Italian - Mix 1 tablespoon Italian seasoning and 1/2 teaspoon garlic powder with the baking mix. Mexican - Decrease baking mix to 1/2 cup. Mix in 2 tablespoons cornmeal and 1-2 tablespoons chili powder with the baking mix. |
