CARROT MUFFINS 
1 1/2 c. shredded carrots
2 apples, chopped
1 c. dates or raisins
1/2 c. nuts
1/2 c. skim milk
2 eggs, beaten
2 tsp. cinnamon
1 tsp. vanilla
1 banana (mashed)
1 c. oat bran
1 c. flour
1 c. brown sugar
1/4 c. oil
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Beat all and bake in well greased pan at 375 degrees for 18-20 minutes.
