PESTO CHEESE SPREAD 
8 oz. Neufchatel cheese*
4 tbsp. pesto
olive oil (optional)

*Cream cheese may be used.

Let cheese soften until the pesto can be worked in with a fork. Mix well. If the mixture seems too dry to spread, mix in some olive oil, a few drops at a time. Spread on crackers, Melba rounds or bagel chips.
