ZUCCHINI SOUP 
1 pkg. Italian sausage
1 lb. zucchini squash
2 c. chopped celery
1 1/2 diced onion
1 (28 oz.) can whole tomatoes, cut up
2 tbsp. Italian seasoning
1 bell pepper, cut up and peeled
Mushrooms (optional)
Yellow squash (optional)

Remove sausage from casing. Crumble and brown. Drain off most of grease and saute celery and carrots in remaining grease. Return meat to pan and add tomatoes and spices. Put all in a large pot and add 2 cans of water. Simmer 20 minutes. Add salt and pepper to taste. Add bell pepper, mushrooms and squash, simmer another 10 minutes.
