PESTO BREAD 
2 c. fresh basil
1/4 c. fresh parsley
1/4 c. Parmesan cheese
3-4 garlic cloves, crushed
1/4 c. pine nuts
1/2 c. olive oil
Salt & pepper
Italian bread
Mozzarella
Tomato slices

Combine first 7 ingredients in food processor and blend with steel knife. Spread mixture on Italian bread halves (sliced lengthwise) cover with cheese then tomato slices. Add salt, pepper and oregano if desired. Bake at 350 degrees approximately 20 minutes and then place under broiler for 1 minute. Watch carefully.

Yield: Enough pesto for 2 whole loaves of bread. You can divide and freeze.
