AN APPLE FOR THE TEACHER BREAD | |
1 c. sugar 1/2 c. vegetable oil 2 eggs 3 tbsp. milk 1 1/4 c. applesauce 2 c. all-purpose flour 1/2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. ground cinnamon 1/4 tsp. salt 1/4 tsp. ground nutmeg 1/4 tsp. ground allspice 1/2 c. seedless dark raisins Cinnamon stick for garnish 4 sm. candied mint leaves or garden leaves for garnish In a mixing bowl with electric mixer, beat sugar, oil, eggs, milk and applesauce until blended. Add remaining ingredients and mix until blended. Grease 4 (10 oz.) custard cups. Divide batter among the cups. Bake at 350 degrees for 40 to 45 minutes or until cake tester or toothpick inserted in center comes out clean. Cool 10 minutes; invert onto racks, turn right side up, and cool completely. May be refrigerated for 1 week. May be frozen. As a holiday gift, place 1/2 inch cinnamon stick into center of bread for apple's stem. Insert candied or real leaf next to stem. Makes 4 loaves. |
