FRESH APPLE BREAD 
1 c. brown sugar
1 c. granulated sugar
1 tsp. salt
2 eggs, slightly beaten
1 1/4 c. vegetable oil
1 tsp. vanilla
1 tsp. baking soda
3 c. flour
1 c. chopped pecans
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
4 apples (med.), peeled & grated

Cream oil and sugars, blending well. Add eggs and vanilla. Mix dry ingredients, add to first mixture, blend until smooth. Add nuts and prepared apples. Pour into 2 well greased loaf pans; bake at 350 degrees for 1 hour (or 1 hour 10 minutes). NOTE: Can also be baked in bundt pan for cake.
