NESSELRODE PIE | |
3/4 c. sugar (save 1/4 cup) 1/4 tsp. salt 1 envelope Knox gelatin 1 1/4 c. milk 3 eggs, separated 1/3 c. candied fruit cake mixture, chopped very fine 2 tbsp. Rum or Rum flavoring 3/4 c. heavy cream, whipped 1 baked pie shell Combine 1/2 cup sugar, salt and gelatin in double boiler, add milk. Place over heat and stir until gelatin dissolves, 5 or 6 minutes. Remove from heat. Separate eggs, beat yolks and gradually beat in hot mixture. Add fruit and cook until mixture coats spoon, stirring occasionally. Remove from heat and add Rum. Chill until thick, but not set. Beat egg whites until foamy, add the remaining 1/4 cup of sugar, beat until stiff. Fold into gelatin mixture, add whipped cream, saving part of cream to decorate top of pie, if desired. Can also put a border of shaved chocolate around pie. |
