CHINESE HAMBURGER CASSEROLE 
1 1/2 lbs. ground beef
2 tbsp. salad oil
1 med. onion, chopped
1 c. celery, chopped
1 can cream of chicken soup
1 can fancy chop suey vegetables, drained
1 1/2 c. warm water
1/2 c. rice, uncooked
1/4 c. soy sauce
1/4 tsp. pepper

Brown meat in oil. Add onion, celery, soup, chop suey vegetables and water. Stir in rice, soy sauce and pepper. Pour into a 2 quart greased casserole dish with lid. Cover and bake at 375 degrees for 30 to 35 minutes. Uncover and bake an additional 30 to 35 minutes. Yields 6 to 8 servings.

This is one of our families favorite recipes. It is easy and I always have to double the recipe so we can have leftovers which my husband takes in his lunch box. I do add a little more (about 1/2 cup) extra water so it doesn't dry out but otherwise the recipe is true to the listed recipe. (We have this casserole at least twice a month and I take it to church functions -it is always a winner)
