FISH CROQUETS 
3 c. cooked, flaked fish
1/4 bell pepper
25 Ritz crackers
1/4 fresh onion
1 egg
Seasoning

Boil fish, drain and flake. Saute onions, and bell pepper. Beat egg. Roll crackers fine. Mix fish, onion, pepper, egg, red pepper (or other desired seasoning) and 1/2 cup cracker crumbs. Roll into balls and cover with remaining crumbs. Sprinkle left over crackers over fish and bake in 350 degree oven until brown.
