BARLEY CASSEROLE 
1 c. uncooked barley (not instant)
3 1/4 c. water
Salt and pepper to taste
Diced green pepper
Diced onions
Diced tomatoes
Diced celery
Diced mushrooms
1/2 to 1 c. grated Cheddar cheese

Mix all vegetable ingredients and place in two quart casserole. Bake at 350 degrees for 45 minutes. Remove from oven; mix; sprinkle with grated Cheddar cheese. Return to oven for about 15 minutes.
