MINCEMEAT CAKE 
1 pkg. mincemeat
2 c. boiling water
2 c. sugar
2/3 c. Wesson oil
3 1/2 c. flour
1/4 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves
1 tsp. allspice
2 eggs plus 3 egg whites

Pour boiling water over mincemeat to dissolve. Mix other ingredients and add to mincemeat. Bake about 30 minutes at 350 degrees or until the toothpick comes out clean.

ICING:

1 tsp. vanilla
3 egg yolks
1 c. coconut
1 c. sugar
1/2 c. cream or evaporated milk
1 stick butter

Mix all together and cook over low heat until thick. Cool and spread on cake.
