RICE PUDDING 
1 c. river rice
1 c. sugar
2 tsp. butter
1 qt. milk
1 tsp. salt
2-3 eggs, beaten
1 tsp. vanilla
Cinnamon

Mix rice, sugar, butter, salt, and milk into saucepan. Bring to a boil and simmer and stir until rice is tender, about 25-35 minutes. If dry, add more milk. Remove from heat and add eggs; return to heat for 2 minutes. Mix thoroughly. Add vanilla. Pour into dessert dishes and when cool, sprinkle cinnamon.
