COTTAGE CHEESE CUCUMBER SALAD 
1 (3 oz.) pkg. lime jello
1 c. boiling water
2 tbsp. lemon juice
1 c. cream style cottage cheese
1 c. very finely chopped cucumbers

Dissolve package of jello in boiling water. Add lemon juice. Chill until partially set. Beat until light and fluffy. Fold cheese and cucumbers into jello. Pour into mold. Chill. Yield 6 servings.
