COTTAGE CHEESE CUCUMBER SALAD 
1 (3 oz.) pkgs. lemon gelatin
1 c. boiling water
1 tsp. grated onion
1 c. cream style cottage cheese (drained)
1 c. finely chopped cucumber

Dissolve gelatin in water. Add onion. Chill until partially set. Beat until light and fluffy. Fold in cheese and cucumbers. Pour into mold. Chill until firm. Serves 6. For stronger lemon flavor, add 1 to 2 tablespoons of lemon juice.
