PAT'S CHEESECAKE 
9" or 10" springform pan

Heat oven to 500 degrees.

CRUST:

1 1/4 c. graham cracker crumbs
1/4 c. sugar
1/4 c. melted butter

Blend crackers, sugar and butter. Butter springform pan. Pat crust onto bottom and sides of pan, needn't be perfect.

FILLING:

5 (8 oz.) pkgs. cream cheese, room temp.
1 3/4 c. sugar
5 eggs
3 tbsp. flour
1/4 c. heavy cream

In mixer or food processor blend cream cheese, sugar and flour. Add eggs, one at a time, blending well after each. Lower speed to medium. Add cream and blend. Pour into pan. Bake at 500 degrees for 10 minutes. Lower temperature to 200 degrees and bake for 1 hour. Turn oven off and leave in oven one hour. Let sit at room temperature out of draft until cool. Seal well and put in refrigerator at least 24 hours. Remove from pan just before serving, loosen first, then slide off.
