CALZONES 
1 lb. (1 loaf) frozen white bread dough
1/2 lb. Italian sausage, remove casings and crumble
1 sm. onion, chopped
2 cloves garlic, minced
8 oz. tomato sauce
1/2 tsp. each basil and oregano
Crushed red pepper to taste
1/2 c. cottage cheese
1/2 c. Mozzarella cheese
2 tbsp. Parmesan cheese
1 egg, beaten
1 egg white, slightly beaten
1 egg yolk, beaten with 1 tablespoon milk

Loosely wrap bread with plastic wrap. Refrigerate overnight to thaw. Let stand at room temperature 1 to 2 hours to soften. In pan, saute sausage until brown. Add onion and garlic and saute. Stir in tomato sauce and spices. Simmer 5 minutes. Cool. Stir in cheeses and whole egg. Punch down dough. Divide into 8 equal pieces. Form each into ball. On floured surface, roll each to 6 inch circle. Place 1/3 cup filling on 1/2 of each round. Brush edges with egg white; fold other half over filling and pinch edges with floured fork to seal. Brush lightly with egg yolk mix. Prick tops with fork. Bake in preheated 425 degree oven 12 minutes or until golden.
