DOT'S POTATO SOUP 
4 med. potatoes, grate coarsely
4 strips bacon, fried crisply, crumbled or chopped
2 med. onions, saute in bacon fat and butter
1 c. milk
1 carrot, grated
Fresh parsley, cut
Salt & pepper

Boil potatoes in small amount of water, do not drain. Fry bacon and crumb. Saute onions in bacon fat and butter. Combine potatoes, bacon and onions, then add milk, carrot, parsley, salt and pepper. Lastly add 1 tablespoon (or more) sour cream.
