BAKED POTATO SALAD | |
6 to 8 potatoes, boiled, peeled (if desired), and cubed 1 med. onion, diced (I saute mine until clear in bacon) 1 c. Hellmann's mayonnaise 1/4 c. sugar (I use brown) 2 tsp. Dijon prepared mustard 1/2 lb. Velveeta cheese, cubed 6 to 8 slices of bacon, cooked crisp, drained and crumbled Sliced olives, optional Mix diced potatoes, onion and bacon. Mix sugar, mustard and mayonnaise well and fold into potato mixture. Add cubed cheese. Top with olives, if desired. Bake at 350 degrees for 45 minutes. Good hot or cold. |
