HEARTY BAKED POTATO SALAD | |
8 potatoes 1/2 c. onion, chopped 2 tbsp. parsley 1 can Cheddar cheese soup 1/2 c. mayonnaise 1/2 c. plain yogurt 4 oz. bacon, fried, drained and crumbled Cook potatoes and cool. Cut into chunks. Spread evenly over bottom of 9 x 13 inch pan. Combine onion, soup, mayonnaise, parsley and yogurt. Pour over potatoes. Sprinkle bacon on top. Garnish with paprika. Cover with aluminum foil and bake at 350 degrees for 1 hour, uncovering for last 30 minutes. |
