HAWAIIAN CARROT CAKE 
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 c. sugar
1 1/2 c. cooking oil
4 eggs
2 (7 oz.) jars Junior baby carrots
1 (8 oz.) can crushed pineapple, drained
1/2 c. chopped pecans

Grease and flour two 9 inch cake pans.

Sift all dry ingredients together. Add cooking oil, eggs and carrots. Mix together. Add pineapple and nuts. Bake in a 350 degree oven for 55 minutes.

ICING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1 (16 oz.) pkg. confectioners sugar

Soften butter and cream cheese. Mix all ingredients thoroughly.
