SUMMER CHICKEN SALAD 
1 box instant wild rice
1 pkg. boneless chicken breasts
1/2 c. chopped green onion
1/2 c. chopped celery
1 c. mayonnaise
Optional: Seedless white grapes, halved
Optional: Pineapple chunks

Prepare wild rice according to package and cool. Cut chicken breasts into bite size pieces and simmer slowly in water until done, about 20 minutes.

Mix rice and chicken together. Add mayonnaise and greens; mix. This is good on bread or alone. Also good alone with halved seedless white grapes and pineapple chunks mixed in.
